Banana Recipe


3 eggs
3 bananas
1/4 coconut flour
2 tbspns coconut
2 tbspns macadmia oil
1/2 tspn cinnamon

Combine all ingredients well. Spoon mixture onto fry pan. Brown. Serve with whipped coconut cream and strawberries.


Beef Chilli
I am still working on this one. The recipe I used didn't really hit the spot. I'll try a different recipe and post when I reckon I've got a good one :)

Chilli and Garlic Prawns

2 tbspns olive oil
Heaped tspn chilli flakes
2 gloves garlic
1/2 kg cooked prawns
Salt and pepper

Heat oil gently. Add garlic and chilli and cook until fragrant (less than a minute). Remove from heat and add the cleaned prawns. Allow prawns to heat through. Spoon prawns and marinade onto a bed of spinach leaves.




Coconut Bark
Adapted. Sweet Cheeks


500g coconut
3 tbspns macadamia oil
Apricot finely chopped
Sultanas

Process the coconut and oil until it turns to a smooth liquid.
Pour onto a tray lined with baking paper.
Sprinkle on dried fruit.
Place in the refrigerator until it has set.
Break up into desired portions.

Variations: add nuts, seeds or other dried fruit (no added sugar of course). As a very special treat (not during Whole30) add crumbled 85% chocolate.

Cookies


1 cup ground almonds
1 cup ground unsweetened dried fruit
3/4 cup coconut
1/4 cup macadamia oil
2 omega 3 eggs

Combine all ingredients. Spoon mixture onto a greaseproof lined tray and bake on 180*C (FF) for 20mins or until brown.

Fried Chicken
Adapted. Paleomama


2 chicken breasts
1/2 cup almond meal/coconut flour/coconut
2 omega 3 eggs
Tspn paprika
Tspn garlic powder
1/2 tspn thyme
Tspn hot chilli flakes
Salt and pepper
Macadamia oil for frying

Cut chicken finely and tenderise. Combine all spices. In a bowl coat chicken with spices. Roll chicken in almond meal, dip in eggs and then roll in almond meal again. Leave chicken to stand for 5mins.
Fry chicken until cooked and golden.

Fruit rainbow


Skewers
2 punnets of strawberries
Pineapple cubed
Rockmelon cubed
Green grapes
Black grapes

On each skewer place a black grape, two green grapes, a cube of rockmelon, a cube of pineapple and a whole strawberry. Arrange skewers in a semicircle on a large platter.

Guacamole


2 mashed avocado
Squeeze of lemon juice
Diced tomato
Sprinkle garlic
Salt and Pepper

Combine all ingredients well, except for the tomato. Add tomato and mix gently.

Hot Nutty Cereal

2 cups almond meal
2 cups water
1 cup unsweetened apple sauce
Tbspn cinnamon

Combine all ingredients and warm in a saucepan. Simmer until desired thickness. Serve topped with fresh berries.

1 kg kangaroo mince (Woolworths)
2 onions
Zucchini grated
Carrot grated
2 tbspns macadamia oil
Tspn nutmeg
Handful of parsley
Macadamia oil for frying


Combine all ingredients. Shape into rissoles and BBQ or fry on a pan.

(Paleo) Mayo
Everyday Paleo


2 omega 3 eggs
2 tbspns apple cider vinegar
1 tspn yellow mustard
1 tspn sea salt
1/3 tspn cayenne pepper
2 cups olive oil

Blend eggs, vinegar, mustard. Very slowly, while the blender is still running pour (very slowly) in the oil. Allow to blend until the mayo is thick. Add the salt and pepper and blend again.

Meatballs in Bolognaise


500g beef mince
Omega 3 egg
1/2 almond meal
Red chilli
Handful of basil
Sprig of rosemary
3-4 cloves garlic
Tspn ground cumin
Salt and pepper

Combine all ingredients well. Make into meatballs. Preheat oven to 180*C. Place in oven on baking paper for 20mins.

Tin tomatoes
2-3 garlic cloves
Small onion
handful of basil
1/4 coconut cream
Macadamia oil for frying
Salt and pepper

Saute onion and garlic until soft. Add the tomatoes, bring to the boil and then simmer for 10mins. Add coconut cream and combine well. Add basil and season.

Plate up: Load up your plate with meatballs and then pour sauce on top.

Mint Pesto Chicken Stir-Fry


2 chicken breast cut thinly and tenderised
2 cups mint leaves
1/4 pine nuts
1/4 cup olive oil
Macadamia oil for cooking
1 sliced onion
2 handfuls of quartered mushrooms

Process the mint and pine nuts. Slowly integrate the oil. Heat the wok and stir-fry the chicken until cooked. Remove chicken from the wok. Reheat wok and stir-fry onion until soft. Add the mushrooms and stir-fry for a further 2 minutes. Add the chicken and mint pesto and stir-fry until all is heated through.

Moroccan-Style Lamb Meatballs
Jen's Gone Paleo

500g lamb mince
1/2 large onion
2 garlic cloves
1 omega 3 egg
Handful of parsley and mint
Heaped tspn cumin
Tspn cinnamon
Salt and pepper to taste

Combine all ingredients and shape into meatballs. Fry in oil until brown.





Muffins


2 cups almond meal
Mashed banana
1/2 cup unsweetened apple sauce
2 omega 3 eggs
1 tspn baking soda
4 tbspns coconut
Heaped des spn macadamia oil
2 tspns cinnamon
1 cup sultanas

Combine all ingredients. Spoon into cup cake shells. Place in the oven for 20mins on 180*C (FF).

Variation: Add any dried (no added sugar) or fresh fruit of your choice; apple sauce can be substituted for any baby fruit puree combination.

Omelette


4 omega 3 eggs
Salt and Pepper
Dried basil
Spinach leaves

Whisk eggs and then pour into pan that has a little macadamia oil.
When the underside is cooked, sprinkle spinach leaves on one half and basil and seasoning on the other half of the omelette.
Fold omelette in half and cook for a little longer.
Remove from pan. Serve with tomatoes.

Orange Cake


2 oranges (boiled in water for 1 hr)
3 omega 3 eggs
Cup almond meal
Cup sultanas
1/2 tspn vanilla essence
1/2 tspn baking soda

Process oranges (including skin). Then, add eggs, almond meal, 1/2 cup of sultanas, essence and baking soda, and mix well. Finally, fold in the remainder of the sultanas. Pour mixture into a pan lined with baking paper. Bake for 30mins.

Pancakes

1 cup coconut butter
1 cup unsweetened apple sauce
heaped des spn almond butter
4 omega 3 eggs
1 tspn vanilla essence
1 tspn cinnamon

Combine all ingredients. In a little oil fry pancakes.
Top with berries.

Peach and Pecan Scramble
Adapted. The Paleo Solution Wolf


Macadamia oil for frying
Handful of pecans
2 fresh peaches/10 slices of tin peaches
7 omega 3 eggs
Tspn of cinnamon (or more)
5 tbspns unsweetened apple sauce

Heat oil and fry pecans in fry pan. Add peaches and cook juices away. Combine eggs, apple sauce and cinnamon and then add to the fry pan.

Red Curry (Chicken)


Thai Gourmet Red Curry Paste (Coles)
Cubed chicken
Fish Sauce
Coconut Cream/Milk
Finely chopped spinach (or veggies)

Follow directions on the curry paste bottle

Rissoles and Veggies


Rissoles
1kg mince
1 finely chopped onion
Parsley
Thyme
3 cloves garlic
2 tbspn macadamia oil
1 tspn nutmeg
Salt and pepper
Macadamia oil to fry in

Mix well.
Shape into rissoles.
Fry in macadamia oil until cooked.

Veggies
Whole cauliflower
Tin Ayam Coconut Milk
Salt and pepper
Zucchini

Steam chopped cauliflower  until soft.
Add coconut milk and salt and pepper.
Blend well and serve with steamed zucchini as a side to rissoles.

Roast Chicken


2 tbspns macadamia oil
2 tspns paprika
Whole chicken

Mix oil and paprika. Spoon seasoning over all of the chicken. Roast the chicken breast side up for 1-11/2 hours, on 180*C.

Sweet Potato Fries

1 large sweet potato but into "chips"
1 tbspn macadamia/olive oil
1 tspn Paprika

Sweet Potato Pancakes
Sweet Cheeks


2 cups grated sweet potato
1 apple grated
1 small onion
2 eggs beaten
Tspn cinnamon
1/2 tspn ground ginger
1 tspn lemon
Macadamia oil fro frying

Combine all ingredients well. Place 1/4 cup of mixture in a hot frying pan and flatten. Allow to brown. These pancakes are fragile. Turn over and brown the other side. Serve with meat, eggs or salad.


Salmon and Egg Salad


1/2 tin of Wild Caught Red Salmon
Lettuce
Tomato
Capsicum
1 boiled omega 3 egg
Paleo Mayo
Coriander leaves

Combine.
Place chips, in a single layer, on a baking sheet.
Bake for 20mins (or until soft) on 180*C (FF).
